Legacy and ancestry

Born into a traditional Japanese immigrant family, Tadashi was educated and pressured from an early age to pursue a corporate career – KANOE, his grandmother, was the first person who supported him in pursuit of his dream of cooking and traveling the world.

The KANOE restaurant is a tribute from the founders to Chef Tadashi Shiraishi’s maternal grandmother, and a promise that we will continue the legacy we inherited from our ancestors by guiding and cultivating the new generations of the future.
